When staying with us on Brook House, there’s an abundance of beautiful local cuisines to enjoy. Whether you pop up the road into The Sun Inn in Hulverstone for a tasty burger or a light lunch, or you head into the centre of the Island and enjoy a fine dining experience at Thompsons in Newport, there’s plenty to be said about the Island’s foodie scene.
However, part of what makes the Island’s food so good is the ingredients used. From the prowess of our homegrown produce through to the quality and sustainability of the food used in many of our restaurants, there’s no reason why you can’t sample some of this from the comfort of our kitchens here at Brook House.
We’re going to show you a series of recipes that you can create whilst in our self-catering accommodation this summer, with the first being a trendy twist on a classic favourite – avocado and poached egg on toast, with a dash of feta and chilli to make that dish even tastier for the whole family, or a sure favourite to impress your other half on your holiday.
Step one: Fill a large saucepan with water, add a tablespoon of vinegar and bring to a hard boil over a high heat. Once boiling, reduce the heat so the water is simmering, then use a spoon to swirl the water into a whirlpool. Crack in two eggs and cook for two and a half minutes.
Step two: Meanwhile, in a small bowl, mash one avocado, a handful of feta, a dash of chilli flakes and a squirt of lemon juice. Finally, season well with black pepper.
Step three: An easy step, but crucial to the enjoyment of the dish: toast the bread to your liking.
Step four: Time to combine everything. Firstly, pile the avocado and feta mix generously onto the buttered toast, then put a poached egg on top of each.
Simple, easy and filled with the good fats – it’s a perfect way to start your day on the Isle of Wight. You might even enjoy taking this out into the garden area and enjoying in the morning sunshine.
